Aubergine & Spinach Curry

A creamy and delicious curry made from the comforts of your own home. Bringing a wide variety of spices, flavours into one dish. This recipe is great with cauliflower rice, brown rice or on its own!


  • 1/2 red onion
  • 1 garlic clove
  • 1/2 tsp ground coriander
  • 1/2 tsp ground turmeric 
  • 1 tsp garam masala 
  • 1/2 carrot 
  • 1/2 aubergine
  • 1-2 tbsp tomato puree
  • 1 can chopped tomatoes 
  • 1/4 can Coconut Milk


1. Gentle cook the onion and garlic together with the spices in a tsp of oil. Use water to prevent sticking to the bottom. 

2. Add in the tomato purée, chopped tomatoes, coconut milk, carrot and aubergine. Bring to the boil and then simmer for 10-15mins on a low heat. 

3. Stir occasionally to prevent sticking to the bottom. 

4. Once the carrot and aubergine have cooked add in your spinach and turn off the heat. 

5. Serve and enjoy!
