Cucumber And Pea Chilled Soup

Chilled soup – a lovely refreshing lunch option. A light, cooling and superb way to boost your vitamin levels throughout the day. This dish is best serves chilled so ensure you leave time to allow it to cool before serving.

Ingredients:

  • 2 shallots
  • 3 garlic cloves
  • ½ large cucumber (minced)
  • 100g frozen peas
  • 1L boiling water
  • 2 spring onions
  • 1/2 tsp celery salt 
  • 1 handful of fresh mint

Method:

  1. Gently sautee shallots and garlic in a saucepan. 
  2. Add in all other ingredients and simmer until the peas are cooked.
  3. Allow to cool fully and blend.
  4. Place in the fridge and enjoy cool!
