Kale and Avocado Pesto

A tangy and delicious dairy free twist on a classic pesto dish. A great way to add some more veg into your diet is to bulk up your dips. Snacking has never tasted so good!

Ingredients:

-2 handfuls kale

-½ an avocado 

– 1 handful of pine nuts

-Juice of 1 lemon

– 1 tbsp of Olive Oil

– 1 garlic clove

– salt & pepper to taste

Method:

  1. Place all ingredients into a food processor and blend until smooth.
  2. Serve onto of your favourite pasta or as a dip!
