Tiramisu Chia Seed Pudding

Fat fuelled breakfast pudding. Chia seeds are packed with fibre and essential fatty acids. They are a great breakfast option to help fuel your brains and bodies for the day ahead.

For first layer:
•3 tbsp chia seeds
•150ml unsweetened almond milk
•1/2 tsp maple syrup/ vanilla extract

In between the two chia seed layers:
•1 tbsp of cacao nibs 

For the espresso layer:
•1 tbsp chia seeds
•1 shot of espresso

For the white layer:
•2 tbsp of coconut yoghurt

To top:
•1 tsp of cacao powder 

1. In two separate dishes mix together your chia seed layers and place into the fridge to set for 1 hour. Mix half way into the hour to ensure all chia seeds are soaked well.
2. Time to layer up! Add in your first layer and add onto your cacao nibs. Add on your espresso layer and top with coconut yoghurt and sprinkle on top your cacao powder.
4. Serve and enjoy!
