A low carb, high protein scramble. A plant-based twist on a classic scrambled egg dish. Turmeric contains anti-inflammatory properties that help fight inflammation within the body. Make sure you add a crunch of black pepper to help the turmeric work its magic to full effect!

Ingredients:

•1 chopped shallot

•1/4 block of firm tofu

• 1 handful of cherry tomatoes

•1/2 tsp of turmeric

• 1 tsp of Nutritional Yeast

• 1 tsp of Tamari Soya Sauce

•1/2 an avocado

•sprinkle of chilli flakes

Method:

1. Warm a small amount of olive oil into a frying pan. Add in shallots and cook for 2mins.

2. Next add in the tofu, cherry tomatoes and spices. Cook for 2-3mins.

3. At the last moment add in your spinach and wilt for 20-30seconds.

4. Plate up, add your avocado onto and serve!
